Black Bean Sweet Potato Enchiladas

Holy Moly, Guacamole! Cashew Cream and more! These healthy plant-based enchiladas really have it all! Loaded with veggies and beans, they deliver so many nutrients and so much fiber to the body. 

This recipe features my homemade Fire-Roasted Enchilada Sauce, which is completely free of the added sugars and preservatives you'll often find in store-bought enchilada sauce. 

We like to wrap up in enchilada in an Organic Stacey's Whole Grain Flour Tortilla. These tortillas create the perfect yummy ooey-gooey consistency when baked in our enchilada sauce, but also crisp up nicely on top!

The "cherry on top" of this dish is really the Cashew Cream which adds the perfect creamy element.
