On the busiest of days, kitchari is one of our go-to dinners. While this recipe is delicious when made on the stove top, we make it in our Instant Pot more often. Kitchari is one of the most nourishing meals as it is extremely easy to digest and filled with healing spices that promote detoxification, circulation, and reduce inflammation.

We like to serve ktichari with a starter salad and a side of steamed potatoes to round out the meal, but it is also a complete and balanced one-pot meal on its own.
